Christmas Carbonara

Hello, everybody!

I hope you all had a great holiday weekend. I have another delicious recipe that I am dying to share with you: Christmas Carbonara! I made this scrumptious pasta dish for Christmas dinner with my dad and I hope you find it as delectable as my family did.

Christmas Carbonara Recipe:
Serves 4 people

  • Fill a large pot with salted water and bring to a boil.
  • Cook 12 strips of bacon in a frying pan (medium-high heat) until crispy. Put on paper towels to cool and to drain off the excess fat.
  • Once cooled, chop bacon into small pieces (set aside).
  • Slice 12 shallots, and mince 4 garlic cloves.
  • Melt butter in a saute pan (medium-high heat) and add sliced shallots, minced garlic, and 4 tbsp of pine nuts. Saute until browned.
  • Add 1 box of angel hair pasta to the boiling water. Cook until al dente (pasta box will give you amount of time). 
  • Lower the heat of saute pan to medium-low. 
  • Add one 8 oz jar of sun dried tomatoes, chopped bacon, fresh Italian parsley (chopped) and a grilled or baked chicken breast (optional) to the saute pan. 
  • Beat 4 eggs, 1 cup of half-and-half, 2 tsp of black pepper, and 1 cup of parmesan cheese together in a bowl.
  • Remove saute pan from heat.
  • Drain angel hair and place it into the saute pan (with the already-sauteed contents). 
  • Pour egg mixture over pasta while it is still hot. 
  • Toss contents of pan. 
  • Top with parmesan and parsley.
