Easter is tomorrow, which means it’s time to start BAKING! Let’s try something new…how about some scones?
Let’s be honest. Scones don’t get a lot of love. Most go for the steaming-hot honeycrisp apple cider donut or the heavenly-smelling blueberry muffin, leaving the poor scones cold and lonely at the bottom of the bread basket.
However, when they are light and fluffy and fresh from the oven, scones are actually scrumptious! With their delicate flavor and unique, sticky texture, scones are perfect for springtime tea parties and Easter brunch.
This recipe is inspired by Donna’s scone recipe from allrecipes.com. Here is how to make them (yields 8-10 scones):
- 3 1/2 cups of pastry flour
- 1/2 cup of white sugar
- 5 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 1/2 sticks of butter (cold and cubed)
- 1 egg
- 1 cup of milk
- 1/2 cup of semi-sweet chocolate chips
- Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
- Combine 3 cups of flour (save the remaining 1/2 cup for later) with the sugar, baking powder, and salt. Then add the butter. I find that cold butter yields lighter, more flaky dough.
- Whisk the egg and milk together and slowly pour it into the dry mixture. Stir in the chocolate chips.
- The mixture should look and feel like dough. If it is too sticky, add some of the remaining flour. Place the dough onto a floured surface and gently knead. Then roll the dough into a 1/2-inch thick round and cut into 8-10 wedges.
- Bake for about 15 minutes or until the scones are golden brown. Enjoy plain or with butter or jam.
