Last night it was freezing cold, so my family felt like some delicious, hot soup. But what kind of soup? The world has MILLIONS of soups to warm your bones on frosty winter nights. Well, my dad, who is leaving for his first trip to Vietnam soon, thought we should get “pho” (pronounced FAH). For those of you who don’t know, pho is a Vietnamese soup consisting of mainly broth, noodles, and meat or chicken. The rest of us thought that pho sounded “pho”-nomenal, so we went to a place that we recently discovered that was packed with guests, which is always a good sign! We were excited to get warmed-up with this wonderful soup!
As an appetizer, my Dad ordered us some spring rolls. The spring rolls were a rice wrap filled with greens, rice, meat, and a single shrimp laid just under the rice wrapper. Yum! This part was the icing on the cake, in my opinion! They were crisp, light, and refreshing–a perfect introduction to the meal. They were served with this incredible peanut sauce that I could seriously just eat by itself with a spoon.
When we opened to the “pho” page of the menu, we found that there were exactly 22 different ways to eat your pho! I chose #10: noodle soup with well-done flank. They served it alongside a plate of fresh basil and crisp bean sprouts that you could add, which gave it the perfect crunch. The broth was salty, making the meat and noodles sooo flavorful. It was “pho”-nomenal! (Can you tell that is what I would name my restaurant if I opened a pho noodle house?) It was a wonderfully wintry, warm dinner.
