My family has two elves: Rudy and Noel. Their favorite cookie is the 7 layer cookie. Since today is Christmas Eve, we made 7 layer cookies for our elves on the shelves and for Santa. From the picture, this looks like lasagna, but when you cut into these, there are 7 layers of pure goodness: crushed Nilla wafers, melted butter, sweetened condensed milk, butterscotch chips, chocolate chips, shredded coconut, and walnuts, which are all melted together in the oven. It smells amazing and tastes even better!
7 layer cookie recipe:
- As your oven is preheating to 350 degrees, melt a half a cup of butter into an 8×11 rectangular baking pan.
- Then, crush one and one half cups of Nilla wafers in a Ziploc bag. *Make sure that the Nilla wafers are completely crushed. The crumbs should be as fine as sand.
- Next, put the Nilla wafer crumbs into your pan. *Mix wafer crumbs and melted butter so that they are completely combined.
- After that, pour one 14 oz can of sweetened condensed milk evenly over wafers and butter.
- Then, layer one cup of butterscotch chips.
- Do the same thing with one cup of semi-sweet chocolate chips, one and one third cups of flaked coconut, and one cup of chopped walnuts.
- Bake in heated oven for 25 to 30 minutes (or until golden).
- After baking time, loosen from sides of the pan and let cool COMPLETELY.
- Then cut into bars and enjoy!
